Pumpkin Spice Bread

What you’ll need:
3 ½ Cups flour
1 Cup sugar
1 Cup brown sugar
2 tsp salt
2 tsp baking soda
2 tsp cinnamon
1 ½ tsp nutmeg
2 Cups pumpkin (mashed and puréed)
1 Cup vegetable oil
3 large eggs

Step one:
Grease up two bread loaf pans (9x5x3), and pre-heat the oven to 350°F.

Step two:
Combine your dry ingredients (flour, sugar, brown sugar, salt, baking soda, cinnamon, and nutmeg) in a large bowl.  Combine your wet ingredients (pumpkin, oil, and eggs) in another bowl.

Step three:
Add the wet to the dry, and mix until just blended.  No need to over-mix here.  Divide batter, and pour into the two bread pans. Bake for about 45 minutes, or until no longer liquid in the center.

Like all breads, feel free to let your creativity run wild here.  Add cranberries, nuts, raisins, coconut, or more/less spice.  You can also make a kickin’ sugar glaze to drizzle over the finished and cooled loaf.
