Irish Day Food Friends of Yesteryear

With St. Patrick’s day nearly upon us, the Vegiboys would like to invoke fond memories from almost exactly a year ago, when the arrival of house guests inspired us to whip up an Irish-themed meal in fitting with the spirit of the season.

The obligatory soda bread was baked with caraway seeds, raisins, and dates within the dough.

We started things off with an amuse-bouche of warm leeks in a mustard vinaigrette with minced garlic and chopped walnuts. A parsley garlic hummus in the red dish served as a dip for Sun Chips.

An appetizer of cabbage and cheese-stuffed potato skins followed.

The table concurred on the deliciousness of the appetizers.

For the main course, potato gnocchi was served in a buttery sage sauce with a carrot and yam soufflé on the side (and a buttered slice of soda bread).

Happy diners exhibit the meal (many thanks to Michelle and Helen for joining us, and for bringing a really well matched wine: an Australian Shiraz).

For dessert, a blueberry/strawberry galette was topped with a scoop of Moose Tracks ice cream.
